Roasted sweet potato with hummus and kale
Roasted sweet potato covered with a creamy, tasty hummus and crispy kale. If you want to refresh yourself with something healthy and whole plant, and at the same time nutritious and delicious, then this dish is more than right! The preparation is simple: all you have to do is roast sweet potatoes and kale, the delicious hummus has already been prepared by the Gourmet Club.
2 medium sweet potatoes
100g kale leaves
2 tablespoons olive oil
0,5 teaspoon chilli flakes
1 tablespoon sesame seeds
1 cup Gourmet Club classic hummus
salt, black pepper
Wash the sweet potatoes and pat dry with kitchen paper. Make a few holes in the peel with a fork. Place on a baking tray covered with baking paper. Bake at 200 degrees for 45-50 minutes until sweet potatoes are completely soft. Remove from the oven, allow to cool slightly.
While the sweet potatoes are cooking, you can prepare the kale chips. Cover the baking tray with baking paper and spread the kale on it. Add olive oil, chilli flakes, sesame seeds and salt. Be careful with salt, because kale has an inherently strong taste and it is easy to over-salt them. Mix by hand. Place the tray in the oven and roast the leaves for 8-10 minutes. Be careful, the chips should not go too brown! When they have become dry and crispy, remove from the oven and allow to cool slightly.
Cut the sweet potatoes in half and remove the peel. Add hummus to the sweet potato halves and place the kale chips on it. Grind on black pepper.
