Mediterranean hummus pie
Hummus as a pie filling? Yes, it works great! Tomatoes, olives and feta cheese form a delicious Mediterranean combination that fits on top of a hummus filling. Serve with a fresh salad and you can have a decent lunch or dinner.
300 g of yeast puff pastry
Filling:
2 cups (total 400 g) of Gourmet Club classic hummus
2 eggs
200 g of cherry tomatoes
12 black olives
half a red onion
150 g of feta cheese
1 tablespoon olive oil
fresh basil
grated lemon peel
salt, black pepper

Grease the bottom and sides of the 23 cm baking mold. Let the dough melt and roll a little thinner. Place the dough to baking mold, cover the sides as well. Make a few holes in the bottom of the puff pastry with a fork. Pre-bake at 200 degrees for 5-7 minutes. The bottom may rise a little in the oven, which is okay.
Mix hummus with eggs, season with a little salt and black pepper. Place the filling on the bottom of the pre-baked puff pastry. Place on top of cherry tomatoes, olives and sliced red onion. Sprinkle the feta cheese on the filling. Drizzle with olive oil. Place the pie in the oven and bake at 200 degrees for 20-25 minutes.
Let the pie cool for at least an hour before cutting it open. Before eating, sprinkle with black pepper, fresh basil leaves and slightly grated lemon zest.
