Mediterranean hummus pie

Hummus as a pie filling? Yes, it works great! Tomatoes, olives and feta cheese form a delicious Mediterranean combination that fits on top of a hummus filling. Serve with a fresh salad and you can have a decent lunch or dinner.

300 g of yeast puff pastry
Filling:
2 cups (total 400 g) of Gourmet Club classic hummus
2 eggs
200 g of cherry tomatoes
12 black olives
half a red onion
150 g of feta cheese
1 tablespoon olive oil
fresh basil
grated lemon peel
salt, black pepper
butter

Grease the bottom and sides of the 23 cm baking mold. Let the dough melt and roll a little thinner. Place the dough to baking mold, cover the sides as well. Make a few holes in the bottom of the puff pastry with a fork. Pre-bake at 200 degrees for 5-7 minutes. The bottom may rise a little in the oven, which is okay.
Mix hummus with eggs, season with a little salt and black pepper. Place the filling on the bottom of the pre-baked puff pastry. Place on top of cherry tomatoes, olives and sliced ​​red onion. Sprinkle the feta cheese on the filling. Drizzle with olive oil. Place the pie in the oven and bake at 200 degrees for 20-25 minutes.
Let the pie cool for at least an hour before cutting it open. Before eating, sprinkle with black pepper, fresh basil leaves and slightly grated lemon zest.
