Pesto chicken Caprese salad
A delicious variation of the famous Caprese salad, where chicken fillet is marinated in pesto and the salad dressing is also made from pesto. If you have not tried chicken marinated in pesto before, this recipe is perfect for experimentation: chicken gets a pleasant herb flavor from pesto and all the flavors go perfectly together. Sun-dried tomatoes, mozzarella, pesto and delicious chicken fillets are a truly enjoyable combo.
500 g chicken fillets
1 cup (150 g) Gourmet Club basil and almond pesto
1 teaspoon salt
0.5 teaspoons black pepper
1 tablespoon lemon juice
1 ball (250 g) of mozzarella
250 g cherry tomatoes or other tomatoes of your choice
Cut the chicken fillets into pieces. Grease the chicken pieces with half a cup of pesto (75 g), salt, black pepper and lemon juice. Let marinate in the refrigerator for at least 3 hours until overnight. Put the chicken pieces on the sticks and cook on the grill. It takes about 15 minutes. Chicken marinated in pesto can also be fried in a pan or baked in the oven.
Slice the mozzarella and cut the tomatoes in half. If you use large tomatoes, slice them. Spread the tomatoes, mozzarella and basil leaves on a platter or plates.
