Quinoa salad with vegetables and pesto sauce
The secret of the good taste of this healthy and nutritious quinoa salad lies in pesto! That’s right, pesto makes a wonderful salad dressing- it already has plenty of flavor in itself!
1 dl quinoa
2 dl of water
100 g of broccoli
half a red onion
2 short cucumbers
a small handful of almonds
a large handful of spinach
15 black olives
3-4 tablespoons Gourmet Club basil and almond pesto
1 tablespoon lemon juice
salt, black pepper
Wash the quinoa seeds under running water through a tight sieve. Boil them in a salted water. Boil on low heat for 10 minutes. Whisk with a fork and allow to cool completely.
Cut the broccoli into smaller pieces. Slice the onion and chop the cucumbers. Chop almonds. Put spinach leaves, olives, all the chopped vegetables and chilled quinoa into a bowl. Also add chopped almonds, pesto sauce, lemon juice, salt and black pepper. Mix everything gently.
